mandarin help

Post by Esther » Sun Jul 31, 2016 10:11 pm

Have about 8 mandarins that aren't good eating. Want to use them in cooking if I can. Challenging myself to throw out less food. Have a recipe for marmalade. Easy enough, or other suggestions please?

My mum makes a cake that involved boiling the mandarins to mush, then pureeing them and mixing them into a cake batter. It has almond meal in it (it is a GF recipe) but I guess you could use the same idea to replace the moisture in a plain butter cake.
It's OK Pluto, I'm not a planet either

Oh, now I could work with that! I have a similar recipe with oranges (including almond meal), but it's worth a go!

Thanks MW :-)
