Depends what you are doing with it. When I make caramel slice I just combine the ingredients then put it on the base and bake, I also underbake the base first time round, because I am cooking the caramel a bit longer. I have never made it in a saucepan, because I only use it for caramel slice. That said I would definitely stir it as I cook it in a saucepan, it would stick to all of mine if I left it alone.
I tend to stir it as it can burn very easy. When I make fudge I let it stick slightly to the base of the pot (don't let it burn) and then stir the stuck bit throughout I find it gives it a stronger flavour
Left it alone, then panicked and stirred it. Quite lumpy and awful but after a looooooong time stirring it was passable. Caramel is my nemesis.

Don't stir!! My chocolate making hubby is always yelling at the people on cooking shows that stir their caramel He makes the best salted caramel for his chocolates btw!
