Diabetic birthday cake ideas?

Hi ladies

One of my colleagues is pre-diabetic and is waiting on a confirmation of actual diabetes. And it is her birthday next Thursday! Any ideas for how we can celebrate? She is on a very restricted diet - more restricted than most diabetics I know. No starches at all (including no root veg), only allowed berries (no other fruits), limited dairy, no pulses.

Any suggestions very welcome because I'm stumped! I was thinking some kind of diabetic jelly-mousse type cake without a crust.

Goodness, that sounds very restrictive! I like the idea of a jelly! Maybe with whatever berries are permitted, to give it some colour?

You said limited dairy, but would a fancy cheese 'cake' work. I mean a round of fancy cheese and crackers, as opposed the cheesecake.

Yes, I was thinking that is another option. But without the crackers!! A friend of ours had one for her wedding - it looked great.

A raw vegan cheesecake? So a base of nuts, seeds, dried coconut and whatever sweetener is allowed (stevia?). Berries, cashews, coconut milk/oil and sweetener for the actual cheesecake part.

Crazy idea here - how about a food free celebration? You could buy her flowers or something instead?

That is a pretty good idea - I'm allergic to all kinds of nuts, but I don't have to eat any and someone else can cook it.

Maybe Frittata and a beautiful salad, rather than trying to create something sweet ? Eggs, allowed vegetables, super-duper salad ingreadients.
