Gassy, fussy baby..oversupply? dairy allergy?

My 6 week old is extremely gassy, grunty, fussy and pooey, he has been since birth. He feeds every 2 hours almost religiously, a few nights we've has 3-4 hour gaps but very rare. He wakes himself with gas, scrunching his legs and squirming, and it keeps him awake. He has hours of sleep each night when he grunts and cries in his sleep.
When he feeds he often gets wind pain and squirms and fusses, coming off the breast and getting distracted, which makes it hard to know when he's done.
He does have periods of calm and restful sleep. He's growing a lot, very big, and otherwise seems very healthy.
His poo's are mostly yellow, sometimes green, always watery and he fart/poos constantly, always some poo in his nappy, which is irritating his bum...
I have a history of dairy allergy, I gave it up for a couple of weeks but didn't seem to make a difference.
I'm sure I have a lot of milk, he gulps sometimes and one breast the past 2 nights seems engorged! i'm at a loss of what to do, I try to make sure he drains the boob to get the hind milk but not sure thats the right thing to be doing. I'm worried about block feeding because of the very full boob.
Any advice appreciated!
